ℹ White Mulberry Trees (Morus Alba) are extremely cold hardy (Zone 3) and produce fruits which are white when immature, but gradually ripen to shades of light pink. These unique berries are produced on a backdrop of lush green heart shaped foliage and ripen in mid summer. They are a small variety, just a few centimeters long, and have very little tartness compared to black and red mulberries. They have a low acidity and a mild honey-like flavor. White mulberries are best when slightly overripe. The advantage is that when baked or juiced, they don't impart any color. They are used in pie and tart fillings, ice cream, jellies, jams and other baked goods. They are good raw as a snack or added to salads, but also dry excellently well for granola or cereals.
