This popular herb has beautiful, evergreen broad shiny leaves and is slow growing but easy to care for. The bay leaf is well known for its use in hearty stews and other long-simmering dishes. The slightly sharp, peppery, almost bitter taste adds much to dinner. Add the whole leaves at the beginning of the cooking process and remember to remove them before serving. Use fresh or dried, makes a good meal great by adding its earthy taste and when kept in proper conditions, has a long shelf life of about a year. Also highly prized as an ornamental, Laurus nobilis is often trimmed into topiary shapes, and the trunks can be trained into braids and spirals. They also do very well in containers, making a handsome specimen for the patio, or simply to keep nearby as a kitchen herb. To successfully cultivate this botanical rarity in Canada, they are easily grown in pots, which are moved indoors before frost and placed outdoors during the growing season on a sun drenched patio, balcony or deck.
